Pea and Almond Salad

This is a very simple yet yummy salad that I use for all sorts of occasions, always a good addition to a buffet. 

Ingredients:


10 ounces frozen peas thawed but still very cold
6 oz can of smoked almonds w/ a few set aside for garnish
3 green onions chopped
1/3 cup mayonnaise
1 tablespoon of curry

Combine the peas, almonds, and green onion in a bowl. In a separate bowl thoroughly mix the mayonnaise and curry so there aren’t any clumps of curry. 


Let set for about 5-10 minutes so the curry can infuse the mayonnaise. 

Pour into the pea mixture and toss well. Keep nice and cold until serving adding the few reserved almonds to garnish.

8 small portions
