Black Bean and Mango Salsa

This is a refreshing colorful salsa that goes well with chicken or pork. It’s also a simple dip to pair with tortilla chips ! Great flavor and low in fat.

1 can of black beans, drained and rinsed
1 large mango, chopped
1/3 cup red onion chopped
¼ cup of fresh cilantro, chopped
1/3 cup red bell pepper, seeded and chopped
Juice of one lime
Salt to taste

Combine the black beans, mango, onion, cilantro and bell pepper in a medium sized bowl. Squeeze the lime juice over the mixture. Stir well and salt to taste. Cover and cool until ready to use.

Variations:


Add chopped tomato or replace the red bell pepper with tomato.
Add a jalapeno pepper, seeded and chopped fine to add some spicy zing!
Add diced avocado for rich creaminess.
