6 (8") flour tortillas
1 Teaspoon cinnamon
1/2 Cup butter
1/2 Cup sugar
1/2 Cup brown sugar
1/2 Cup water
Preheat oven to 350 °F and grease a 2 qt baking pan.
Spoon one heaping quarter cup of pie filling down the center of tortilla.
Sprinkle with cinnamon; roll up tucking in edges and place seam side down in dish.
In saucepan over med. heat combine butter, both sugars and water.
Bring to boil, stirring constantly; reduce heat and simmer for 3 minutes.
Pour sauce over enchiladas and let stand for 30 minutes.
Bake 20 minutes until golden brown and serve with ice cream, whipped cream, and/or grated cheddar cheese.
