Ingredients:
8 links of Italian Sausage or bulk Italian sausage (I prefer spicy)
White Onion chopped
Italian Green Beans, fresh or canned 14 oz
4 Italian squash (zucchini) Chopped
Can of artichoke hearts packed in water 14 oz
Lg can diced tomatoes 28 oz
Lg can crushed tomatoes 28 oz
Can of beef broth 14 oz
Pasta of choice: bowtie, penne, or small elbow Appx ½ box or ½ lb
Optional: canned small white beans
Seasonings: Garlic salt, pepper, Italian seasoning, extra oregano if you like the flavor
If you use link sausage, take out of casing , cook sausage in pan until done as you would hamburger, at the end of cooking add about two cups of water and simmer until fat comes to the top and drain fat only. Save the liquid.
In soup pot add all the sausage, liquid from sausage, onions, green beans, artichoke hearts, both cans of tomatoes, diced and crushed, beef broth, zucchini, and beans if using.
Once the zucchini is almost done add the pasta cook until desired firmness.
Add more seasoning to taste or water to thin if too thick.
