Ingredients
1 head Napa cabbage (Chinese cabbage) chopped fine
1 head romaine lettuce chopped fine
6 scallion onions diced finely
1 bunch of cilantro (stems discarded) chopped
Chicken Breast
Mandarin Oranges or Pineapple
1 package Won Ton Skins
Oriental Salad Dressing
Prepare ahead of time
Barbecue 3-4 chicken breasts marinated in an oriental based sauce (teriyaki or other)
After chicken has cooled, dice for mixing into salad greens
Slice the Won Ton Skins into thin strips and fry until golden brown – drain.
Mix all the greens together, then add the diced chicken – just before serving toss with the fried won tons and sprinkle with drained orange segments or pineapple. Serve with chilled oriental salad dressing of your choice.
**For added flavor if using pineapple grill or broil pineapple slices until it starts to brown.
