3-4 lb | Pork Butt |
2 Tbsp | Vegetable Oil |
½ tsp | Cayenne Pepper or, to taste |
1× 12 oz can | Coke, not diet |
2 cups | Orange Juice |
2 Tbsp | Brown Sugar |
2 cups | Salsa, homemade or commercial |
1 Tbsp | Kosher or Sea Salt |
1 Tbsp | Ground |
Black Pepper | |
Juice of 1 Lime | |
4 | Limes, cut into wedges |
Thickening Slurry Composed of 2 Tbsp Cornstarch Mixed Into 2 Tbsp Cold Water |
DIRECTIONS:
Trim the fat and silver skin from the roast. In a large bowl, combine the Coke, orange juice, salsa, cayenne and brown sugar, then add to a slow cooker.
Carefully place the trimmed roast in the slow cooker, cover and turn to low.
Cook for 6-8 hours, or until the roast is fork tender and shreds easily. After cooking, remove the meat to a clean work surface.
When it is cool enough to handle, shred and place the meat in a serving dish to use as a taco filling or as a filling for fried, crisp burritos or carnitas.
HELPFUL TIPS:
After removing the meat, adding lime juice, then thickening the remaining boiling liquid with a corn starch slurry to produce a great tasting dipping sauce. This is a real All American Carnitas. All American? What could possibly be more All American than Coke-Cola?
